Onion Pepper Steak with jasmine rice and early harvest peas

2 to 3 large round steaks, cut into serving sizes
1 Tbsp. pepper
4 Tbsp. butter
2 Tbsp. Worcestershire sauce
2 cloves garlic, minced
2 onions, chopped
2 tomatoes, chopped
2 cups beef broth

Rub steaks with pepper. Melt butter in a skillet and sear steaks on both sides. Add garlic and onions as saute for about 5 minutes. Combine beef broth, Worcestershire sauce and tomatoes. Pour over steaks and simmer for approximately 25 minutes or to desired doneness. Serve over rice with sauce left over in the pan. If you need to thicken the sauce you can add several tablespoons of flour to the sauce and stir over medium heat until sauce thickens up.

Red Macaroni is nothing like spagetti.

you cook a roast (crockpot) Cook up some macaroni shells. Shred roast in with macaroni. Mix in 1 small can of tomato paste. Mix in some of the juice from the roast to desired taste.

This is a very old family recipe.

I keep getting those too. Have finally started drinking cranberry juice everyday, just to keep from getting them. Seems to be helping. When I get them, I'm practically immobilized. Always seem to get them on the same side too, have had 4 so far in the last two years.

Um, chips & salsa earlier, then prime rib & cream of chicken soup later in the evening at NGI.

But gotta say the steak I just BBQ'ed (yup bbq'ed at 1 am) was incredible. Elvis & I devoured it...

Monkey, what is steak Diane? I've been in the mood for steak but the BBQ is kaput. Tonight we're having chicken cordon bleu (already prepared) and scalloped potatoes - and perhaps a Devils food cake (got an urge for it now!) LOL

STEAK DIANE #1

2 lbs. filet of beef
3 tbsp. butter
2 tbsp. oil
1/4 c. brandy or cognac
1/4 c. shallots, minced
1/2 c. parsley
2/3 c. sliced mushrooms
1 tbsp. Worcestershire
2 tbsp. Sauce
1/2 tsp. Dijon mustard
1/4 c. dry Madeira
Salt, freshly ground pepper

Cut beef into thin slices. Heat butter and oil in large skillet. Brown quickly on both sides. Pour brandy over meat; ignite. Let flames burn out; remove meat to platter. Pour off most of butter and oil. Lower heat.
Add to skillet shallots, parsley, mushrooms, Worcestershire, Sauce, mustard, Madeira and salt and pepper to taste. Bring to a boil; simmer 2 minutes. Add beef for a minute or two. Place beef back on platter; pour sauce over.

This is not the NGI recipe, but Chef is not available, so I pulled this one off the internet. I'm sure it's pretty close to ours.

Steak Diane - funny I never heard it before till a few days ago and now saw it on a menu at Cheesecake Factory in Fresno where we had lunch today. Had already ordered or I woulda got it! Anyhow, is this a dish that is making a comeback from the old days or is it a new thingy? No matter what, going to try and get up to NGI in Sept. to try it out. Never been there and never had steak diane so it will be a total new experience for me and goodness knows we can all use a new experience every now and then! http://oakhurstonline.com/icon/eusa_dance.gif

The photos in the slideshow are old photos, Mat has the photos KK, my brother and myself took of the gardens and they should be up on the site in a short time. Steak Diane is not on our menu, but offered as a Chef's special on occasion.

a fresh butter lettuce salad with gorganzola cheese, red onion, and a fresh pear slices with a zippy vinegrette dressing.

Prime rib and salmon, asparagas, rice pilaf and red potatoes.

And to finish it all off...a slice of triple layer chocolate mousse cake.

Catdabrat, I tried your leftover turkey and noodle casserole. It was so excellent! Only thing was with my family's taste of high spiciness, they kicked it up a notch with one person adding hot sauce, another Lawry's seasoning salt and another with ground pepper and more hot flakes. All in all it is a great recipe for leftover turkey. Planning on doing the Monte Cristos tomorrow. Your family must be so lucky having you as a cook!

Thank you for the good words -- I needed to hear something encouraging. Glad you liked the casserole. I usually add more spice to food, too.

My family lucky? They probably don't think so when I make my squid spaghetti recipe!

I made YUMMY homeade veggie soup, with chicken. I started out with a plan for homeade spagetti sauce, but then it evolved into a stew with a hint of curry and fresh cilantro. It was damn good! Throw together a quesadilla on the side and voila!

I had a late lunch in Fresno at The Tower Bay Fish Company. Unfortunately, the place was not as good as it was 2 yrs ago when I lived in "The Tower". Guess ya cant go back eh?

oh. .i had the Ahi Tuna Steak, undercooked veggies and rice pilaf. The chips and bit of fried fish I nicked off of Zen's plate was really good though!!!!

I need a great, spicy, homemade spaghetti sauce recipe to do battle with a friend of mine. His spaghetti is sooo good! It's mildly spicy and no sausage added because his wife doesn't like it. I don't know how he does it. Anyone have a great recipe to share? I will owe you.

Manny's Manly Meat Sauce
No nonsense: meat, mushroom, and macaroni. WARNING: watch the new hairs on your chest! Cook's Notes: Beef broths and stocks now come in re-sealable paper containers found on soup aisle. The paper containers make storage of remaining product easy; keep some on hand in your refrigerator. Depending on your brand, 1 large can of tomatoes can vary in weight from 28 to 32 ounces. Use your favorite, but check to make sure the product is sugar free.

1 tablespoon extra-virgin olive oil, 1 turn around the pan in a slow stream
1/2 teaspoon crushed red pepper flakes
1 pound ground sirloin (90 percent lean ground beef)
1 small onion, chopped
4 cloves garlic, crushed under the flat of your knife with the heal if your hand
1 /2 teaspoon allspice, a sprinkle or 2 pinches (secret ingredient)
Coarse salt and black pepper
1 medium portobello mushroom cap, finely chopped
1 /2 cup (a couple of glugs) red wine
3 /4 cup beef broth or stock, see cook's notes
1 (28 to 32 ounce) can crushed tomatoes, see cook's notes
A handful chopped flat-leaf parsley
1 pound rigatoni, cooked to al dente
Parmesan or Romano, grated, for garnish
Warm crusty bread, as an accompaniment

Heat a deep skillet or heavy-bottomed pot over medium high heat. Go once around the pan with a slow stream of extra virgin olive oil. Add crushed pepper flakes and infuse oil 10 seconds. Add beef, onions, garlic, and seasonings. Brown meat for 5 minutes; add mushrooms and cook 5 minutes more. Add wine and reduce 1 minute. Add broth and tomatoes to sauce and reduce heat to low. Simmer 5 to 10 minutes to combine flavors. Toss pasta with half of the sauce and serve with extra sauce for topping. Pass grated Parmesan or Romano and warm crusty bread at the table.

i add chili pepper flakes for heat. I use spaghetti instead of rigatoni.
