Just started a modification of this recipe, I never really follow what they say...
Anyway, it's a good day for some stew, with crusty french bread & possibly a cobbler for dessert.
(I don't use the beef broth, I simmer a roast with seasonings for 4 or 5 hours & make my own broth. I also use corn, parsley and lots of garlic. I also use olive oil instead of vegetable oil.)
You can also use the basic recipe & cut it in half for a smaller portion, just use the vegetables in the amounts you like best. What's really good is to make this recipe, then with the leftovers make a pot pie. Just thicken whatever is left with flour & put it in a cassorole dish, adding a top layer pie crust. Brush with milk and add a few slits in the crust. Cook until the crust is brown. My boys love this..
INGREDIENTS:
* 2 pounds lean stew beef
* 1 cup chopped onions
* 1/2 teaspoon seasoned salt
* 2 to 3 teaspoons vegetable oil
* 1 can (approx. 10 1/2 ounces) condensed
beef broth
* hot water
* 3 cups diced potatoes
* 2 cups diced carrots
* 1 stalk celery, cut into 1/2-inch pieces
* 2 tablespoons flour
* 1/3 cup cold water
* black pepper and seasoned salt to taste
PREPARATION:
Rinse the beef under cold running water. Heat oil in a Dutch oven or kettle; add beef, seasoned salt. and chopped onions. Cook over medium heat for about 10 to 15 minutes, until the meat is browned on all sides and chopped onions are tender.
Drain off excess fat, if necessary. Add beef broth and hot water to the pot until liquid level about 1 inch above the beef. Cover and reduce heat to low; simmer, covered, for 1 1/2 to 2 hours or until the meat is tender. Add the potatoes, carrots, and celery. Cover and cook, stirring occasionally, for 20 to 30 minutes longer, until vegetables are tender. To thicken the stew, combine the flour with 1/3 cup cold water; stir until smooth. Gently stir flour mixture into the pot a little at a time, using as much as needed to make the stew as thick as you like it. Add pepper and taste for seasonings, adding more seasoned salt if necessary.
Serves 8.

Homemade vegetable-beef soup that is South Beach Diet friendly. Gave me an excuse to clean out the vegetable bins and discard the less-than-fresh (nice way to put it) stuff. I smell it cooking right now .....

New one, very tasty ..
Mushroom Barley Soup
olive oil
sliced mushrooms
1c barley
1 lrg can tomatoe sauce
1 1/2 TBS chicken seasoning
1qrt water
1 lrg potatoe (peeled/cubed)
salt
1 chopped onion
Saute potatoes in oil 10 min
add mushrooms, onion, barley
cook covered until onions are clear
add seasoning, tomatoe sauce, water, bring to boil
simmer 10 minutes

No time to cook right now - got a tri tip pre- baked at Raley's $12.99 plus some mashed potatoes and gravy and I added frozen veggies and rolls. Delicious and was ready in 10 min.!

I've been thinking about this three-meals-a-day (or even two) thing and I don't like it. For the ones preparing the meals, they would never get out of the damn kitchen, or when they do, they need to think about a menu, shopping list, then going out to get groceries, then come home and put them away, etc. etc. ad nauseum. I don't see how we became so conditioned to expect all these meals, day in and day out. People should just eat when they feel like it and if they don't feel like it, just skip it ... and fend for themselves. Everyone should be "kitchen-efficient," so one person doesn't get stuck with it all the time.
I used to live solely to provide the best meals I could for people. I would spend DAYS preparing even just one menu. Now that I have South-Beached myself into learning how NOT to focus on food, I seem to have lost my interest in cooking AND eating. It actually feels wonderful, but my family is still in shock and missing the days when I fed them, and fed them some more, etc.
Yes, I know I am venting and that many people enjoy cooking ... just shake your head and say, "There she goes again!"
P.S. Frog legs are good barbecued.

Tonight's dinner was 4 bowls of cereal (super golden crisp), then 4 hot dogs and 9 cups of coffee at the bowling alley, then 4 tacos from Taco Bell and 2 cans of pepsi on my way home, and now I'm working on this 4.8 Lb tin of Walkers pure butter shortbread that I got for Christmas like a chipper/shredder working on a pile of dried out twigs. http://oakhurstonline.com/icon/yes.gif

Hmmm ... I dunno ... I try to never think of what's next.
Anyway, tonight's dinner is two things: homemade enchiladas, beef and cheese ones, and bagna cauda, that good ol' garlic/anchovy/olive oil hot bath for chunks of meat, mushrooms, cauliflower, celery, apples, Savoy cabbage and bread, but I can't have any of the bread. Or wine.

Speaking of chicken-fried steak, I have discovered that the pounded pork steaks are much tastier for this dish than the beef ones. Also, the breading I use is part Louisiana brand New Orleans style Fish Fry coating (comes in a little bag) and Progresso Garlic & Herb flavored dry bread crumbs. I have never had a better chicken-fried steak than that, and I used to be on a quest for the best, always searching.

Most of my recipes come from me standing in a semi-coma in front of the fridge or cabinets/cupboards knowing that I'm supposed to fix something but not having a clue what to make. I am basically lazy, so rather than go to the store, I will try and figure out what I can create from what's already there. It's just my way of playing "mad scientist," only I use a kitchen instead of a laboratory!
(Once in a while those experiments cause my victims to run to the "lavatory." Still working on perfecting the Squid Cookies.)

I have two whole chickies that I cut in half, spiced it up with about 10 different things (basically a spicy dry rub), and have it out on the grill right now. We'll have leftovers for a few days which I like for lunch. To go with it a salad and probably just heat up a can of baked beans and crack open a bottle of vino.

I ate at the Claim Jumper on Wednesday and was very underimpressed. It took over an hour to be served and when the food finally came, it wasn't very good, just average. The soup tasted canned, the Wedge salad tasted like bottled dressing and my chicken salad with curried mayo was bland. Tried the massive chocolate cake and it was wonderful. 1 Piece fed 6 of us with some left over. The service was good, not her fault it took so long to get the food, and I liked the atmosphere but I won't go back again.

Wow! never had that kinda service at Claim Jumper. But when I was at the casino at Goldfields.... the servers were not at fault but damn... the food sucked and the time to get served sucked even more.

Try the quesadilla at Goldfield's; it's made with barbequed chicken. It's really hard to not eat it all at one time.

I cheated. The salmon was from Von's and was already nut crusted (it was pretty good and very easy to cook), the rice was Minute rice, and the salad has bottled dressing. I don't think you want that on our menu http://oakhurstonline.com/icon/laugh.gif
