Dry Ingredients:
1 and 3/4 cups flour
3/4 cup cocoa
2 cups brown sugar
1 and 1/2 tsp. baking powder
1 and 1/2 tsp. baking soda
1 tsp. salt
Wet Ingredients:
1/2 cup oil (or use an equal amount of applesauce)
2 eggs (or use egg substitue such as Egg Beaters)
2 tsp. vanilla extract (I use the real vanilla, not the imitation)
1 cup milk
1 cup boiling water (or coffee)
1. Add all dry ingredients together and mix well
2. Add eggs, milk, and vanilla and mix well.
3. Add boiling water/coffee at the end and mix well. (Batter will be a bit runny).
4. Pour into a greased 8-inch tin and bake for approx. 50 - 60 minutes at 300 F. (a Bundt cake pan also worked very well).
I just sifted some confectioner's sugar over the top, or you can top each slice with Cool Whip. (or better yet, French Vanilla ice cream, LOL!)
