8 oz. uncooked spiral pasta
2 1/2 Cups diced fresh tomatoes
1 Tbl dried basil (or less if you prefer)
1/4 to 1/2 Cup veggie oil
2 Tbl cider vinegar (I use balsamic sometimes)
2 garlic cloves, minced
1/4 tsp salt (or less)
1/8 tsp pepper
3 Tbl grated parmesan cheese
Cook pasta according to directions. Combine tomatoes and basil in serving bowl, set aside. In small bowl, combine oil, vinegar, garlic, salt and pepper.
Drain the pasta, add to tomato mixture. Drizzle with oil mixture and toss to coat. Sprinkle with parmesan cheese, serve immidiately. Serves approx. 5
Makes a nice summer salad and not too complicated. The oil mixture and diced the tomatoes can be done ahead of time so all you have to do is cook the pasta and combine everything.
